Is there a difference between baking and the other methods of cooking in the oven?

So you may ask, what is the difference between these two? The main difference between them is that baked foods, such as bread, biscuits, cakes, pastries and baked potatoes are cooked by dry heat. There is no surrounding bath of fat or liquid as there is with roasted or casseroled dishes.

Baking is one of the very oldest cooking techniques. Ovens in the early days are made of stone or brick and were filled with wood, which was set alight. After burning, the ashes were removed and bread or other dishes put in to cook in the residual heat. Today's baked dishes are cooked on the same principle, with heat coming from every side.
