Eggplant seems to absorb an enormous quantity of oil. Is there any way to reduce this?

Instead of frying slices of eggplant, brush the slices with oil and either grill, turning to cook both sides or bake on a nonstick baking tray in a hot oven. By doing so, we can reduce the quantity of oil being absorbed by the eggplant.
