Ingredients :
1/2 cup finely chopped boiled lean pork
1/2 cup finely sliced boiled pork skin
1/2 teaspoon grated lemon rind
3 tablespoons dried shrimp powder
1 cup fresh mint leaves
1 tablespoon chopped fresh cilantro leaves
1 tablespoon chopped scallions
3 tablespoons coconut cream
1 tablespoon nam prik
1 tablespoon lime juice
1 tablespoon fish sauce
2 teaspoons sugar
Method :
The pork for this yam should be boiled, and
if cooked as for sweet pork will have lots of
flavor. Slice fat away from skin and use only the jellylike skin.
Mix all the ingredients just before serving and serve sprinkled with chopped
cilantro leaves and scallions.
