Ingredients : 1
1/2 cups sugar

1/2 cups milk

X 410 g canned sweetened condensed milk
125 g ghee
1
cup cooked mashed potato
1
cup cashew nuts, chopped finely
2
tablespoons rose water
1
teaspoon cardamom, ground
Method :
Use a large heavy saucepan to mix in the
sugar, milk, condensed milk and ghee. Cook over medium heat. Stir
constantly until mixture reaches 116oC (240oF) on
a candy thermometer. Remove saucepan from the heat, add the smoothly
mashed potato and beat with a beater until all the lumps are smoothen
out. Return to heat and cook to 116oC (240oF) once
again. Remove from heat and stir in the nuts, rose water and cardamom
and mix well. Pour mixture into a buttered shallow dish. Press lightly
with a buttered spoon to flatten the surface. Allow to cool and set. Cut
into square shapes before serving.
