Cucumber Sambol Recipe

Ingredients :

1 large green cucumbers, peeled and slice very thinly

Salt to taste

1/2 cup thick coconut milk

2 fresh red chilies, seeded and sliced

1 fresh green chili, seeded and sliced

1 small onion, cut in very thin slices

2 tablespoons lemon juice


Method :

Use a bowl and add in the sliced cucumbers. Sprinkle with salt and let it staind for an hour. Press out all the salty liquid and briefly rinse with cold water. Drain well. Mix with the remaining ingredients and serve. Ideal to serve as an accompaniment with meat curries.
