Spicy Pork Curry Recipe

Ingredients : Serves 4

30 ml/2 tbsp oil
450 g/1 lb pork fillet, cubed
1 onion, sliced
2 garlic cloves, crushed
5 ml/1 tsp chili powder
10 ml/2 tsp ground cumin
5 ml/1 tsp ground cinnamon
10 ml/2 tsp ground coriander (cilantro)

300 ml/0.5 pt/1.25 cups water

Salt and freshly ground black pepper

150 ml/0.25 pt plain yoghurt

Boiled rice, to serve

Method :

Heat the oil and fry (saute) the meat until browned on all sides, then remove from the pan. Add the onion and garlic and fry until lightly browned, then stir in the spices and cook for 1 minute. Stir in the water, season to taste and bring to the boil, then simmer for 1 hour until the pork is cooked. Stir in the yoghurt and reheat, then serve with rice.
