150 ml/0.25 pt pineapple juice
45 ml/3 tbsp soy sauce
2 garlic cloves, crushed
75 ml/5 tbsp clear honey
15 ml/1 tbsp dry sherry
2.5 ml/0.5 tsp paprika
1 small onion, chopped
4 cloves
1 bay leaf
5 ml/1 tsp lemon juice
A pinch of grated ginger
4 gammon steaks
1 kiwi fruit, sliced

Method :
Mix together all the ingredients except the gammon and kiwi fruit, bring
to the boil and simmer for 15 minutes until slightly thickened. Meanwhile,
grill (broil) the steaks until cooked through, then place them on a warm
serving dish and arrange the kiwi fruit around them. Pour over a little of
the sauce and serve the remaining sauce separately. |
