Soudzoukakia Recipe

Ingredients : Serves 4

50 g/2 oz/1 cup fresh breadcrumbs

75 ml/5 tbsp milk
450 g/1 lb pork sausagemeat
2 onions, chopped
1 garlic clove, chopped
Salt and freshly ground black pepper
25 g/1 oz/0.25 cup plain (all-purpose) flour

30 ml/2 tbsp olive oil
400 g/14 oz/1 large can of tomatoes, chopped
5 ml/1 tsp caster (superfine) sugar

1 bay leaf
A pinch of ground cumin

Method :

Moisten the breadcrumbs with the milk and squeeze dry. Mix with the sausagemeat, one of the onions and the garlic and season to taste. Shape into little fat sausages and roll in the flour. Heat the oil and fry (saute) the sausages until browned on all sides and cooked through, then drain well. Meanwhile, put all the remaining ingredients into a saucepan and simmer for 45 minutes. Remove the bay leaf and puree the sauce in a food processor or blender, then add the sausages and return to the pan to reheat.
