Sausage Flan Recipe

Ingredients : Serves 4

225 g/8 oz Shortcrust Pastry

15 ml/1 tbsp oil
1 onion, chopped
2 leeks, chopped
3 bacon rashers (slices), chopped

100 g/4 oz mushrooms, sliced

450 g/1 lb pork sausage meat

5 ml/1 tsp Dijon mustard

15 ml/1 tbsp chopped parsley
Salt and freshly ground black pepper

2 eggs, beaten

Method :

Roll out the pastry (paste) and use to line a greased 20 cm/8 in pie dish. Heat the oil and fry (saute) the onion, leeks and bacon until the onion is soft. Add the mushrooms and sausage meat and fry for 15 minutes, then stir in the mustard and parsley and season to taste. Turn the mixture into the pastry case (pie shell) and pour the eggs over the top. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 45 minutes.
