Pork with Peppers Recipe

Ingredients : Serves 4

15 ml/1 tbsp oil
15 g/1 oz/2 tbsp butter or margarine

1 onion, chopped
25 g/1 oz fresh root ginger, grated

1 garlic clove, crushed
4 pork steaks
1 red (bell) pepper, sliced
1 green pepper, seeded and sliced

1 yellow pepper, seeded and sliced

60 ml/4 tbsp dry sherry
30 ml/2 tbsp soy sauce
150 ml/0.25 pt pineapple juice
Salt and freshly ground black pepper

Boiled rice, to serve

Method :

Heat the oil and butter or margarine and fry (saute) the onion, ginger and garlic until soft but not brown, then remove them from the pan. Add the steaks to the pan and fry until browned on both sides, then add the peppers, sherry, soy sauce and pineapple juice and return the onion mixture to the pan. Mix thoroughly and season to taste. Bring to the boil, cover and simmer for 15 minutes until the steaks are cooked through. Transfer the steaks to a warm serving dish and keep warm. Bring the sauce to the boil and boil to reduce and thicken the sauce, then pour it over the steaks and serve with rice.
