Pork Curry with Mango Recipe

Ingredients : Serves 4

750 g/1.75 lb pork fillet, cubed
25 g/1 oz/0.25 cup plain (all-purpose) flour

30 ml/2 tbsp oil
2 onions, sliced
1 red (bell) pepper, sliced
1 green pepper, sliced
5 ml/1 tsp turmeric
15 ml/1 tbsp curry powder
5 ml/1 tsp ground cumin
5 ml/1 tsp ground ginger
2.5 ml/0.5 tsp chili powder
400 g/14 oz/1 large can of tomatoes, drained and chopped
15 ml/1 tbsp tomato puree (paste)

300 ml/0.5 pt/1.25 cups Chicken Stock
450 g/1 lb small new potatoes, scrubbed

400 g/14 oz/1 large can of mango slices, drained
Boiled rice and mango chutney, to serve

Method :

Coat the pork in the flour. Heat the oil and fry (saute) the pork until just browned. Add the onions and peppers and cook for 2 minutes. Add the spices and cook for 1 minute, stirring continuously. Stir in the tomatoes, tomato puree, stock and potatoes, bring to the boil, cover and cook for 20 minutes. Add the mango and cook for a further 5 minutes until the meat and vegetables are cooked through. Serve with rice and mango chutney.
