Mustard Pork Roast Recipe

Ingredients : Serves 6

1.5 kg/3 lb pork joint, boned and rolled

Oil, for brushing
30 ml/2 tbsp made English mustard

15 ml/1 tbsp clear honey
5 ml/1 tsp ground coriander (cilantro)

Method :

Brush the pork with oil and sprinkle with salt. Place in a preheated oven at 200C/400F/gas mark 6 for
10 minutes, then turn the heat down to 180C/350F/gas mark 4 and continue cooking for 35 minutes per 450 g/1 lb. Mix together the remaining ingredients, pour them over the pork and return it to the oven for a final 30 minutes cooking.
