Minted Lamb Steaks Recipe

Ingredients : Serves 4

1 dessert (eating) apple, cored and thinly sliced
15 ml/1 tbsp lemon juice
2 peaches, peeled and sliced
2 kiwi fruits, peeled and sliced
0.5 white cabbage, shredded
150 ml/0.25 pt Mayonnaise
50 g/2 oz/'0.25 cup butter or margarine, melted
30 ml/2 tbsp chopped mint
4 lamb leg steaks
Salt and freshly ground black pepper

Boiled rice, to serve

Method :

Toss the apple slices in the lemon juice, then mix with the peach and kiwi fruit slices and the cabbage. Toss in the mayonnaise and chill. Mix the butter or margarine with the mint and brush it over the steaks, then season to taste. Cook the steaks under a medium grill (broiler) for about 10 minutes each side until cooked through to your liking and browned on both sides. Top with the chilled minted butter or margarine and serve with boiled rice.
