Lemon and Mint Lamb Recipe

Ingredients : Serves 4

4 lamb chops
15 ml/1 tbsp plain (all-purpose) flour

30 ml/2 tbsp oil
1 onion, sliced
Grated rind and juice of 1 lemon

30 ml/2 tbsp chopped mint
15 ml/1 tbsp demerara sugar
300 ml/0.5 pt/1.25 cups Chicken Stock
Salt and freshly ground black pepper

1 small sprig of mint, to garnish

Steamed couscous, to serve

Method :

Toss the chops in the flour, then heat the oil and fry (saute) the chops until browned on both sides. Transfer to a casserole dish (Dutch oven). Add the onion to the pan and fry until soft but not brown. Stir in the lemon rind and juice, mint, sugar and stock and season to taste. Bring to the boil, then pour over the chops and bake in a preheated oven at 180C/350F/gas mark 4 for 1 hours until tender. Transfer to a warm serving plate, garnish with the sprig of mint and serve with couscous.
