Lamb in Pitta with Cucumber Sauce Recipe

Ingredients : Serves 4

250 ml/8 fl oz/1 cup plain yoghurt
1 spring onion (scallion), finely chopped

15 ml/1 tbsp lime juice
15 ml/1 tbsp chopped dill (dill weed)

15 ml/1 tbsp chopped mint
Salt and freshly ground black pepper

4 pitta breads
225 g/8 oz/2 cups cooked lamb, thinly sliced
2 tomatoes, thinly sliced

Method :

Peel the cucumber, halve it lengthways and scoop out the seeds with a teaspoon. Dice the cucumber flesh and mix it into the yoghurt with the onion, lime juice and herbs. Season to taste. Leave to stand. Warm the pitta breads either in a microwave for a few seconds or wrapped in foil in a warm oven for a minute or two. Split the breads and open them out to form a pocket. Divide the meat and tomatoes between the breads and spoon some of the yoghurt sauce into each one. Serve at once.
