Grilled Kofta Recipe

Ingredients : Serves 4

3 slices of bread, crusts removed

45 ml/3 tbsp dry white wine
450 g/1 lb minced (ground) lamb

1 onion, chopped
1 egg, beaten
4 parsley sprigs, chopped
Salt and freshly ground black pepper

30 ml/2 tbsp olive oil
4 pitta breads, warmed
150 ml/0.25 pt Yoghurt Dressing

Method :

Moisten the bread with the wine and a little water if needed. Squeeze it dry and put it with all the other ingredients except the oil, pitta bread and dressing in a food processor or blender and process until smooth and pasty. Using floured hands, shape into rissoles the size of small eggs. Leave to stand for 30 minutes, then thread carefully on to shish kebab skewers and brush with olive oil. Grill (broil) under a hot grill (broiler) for 20 minutes, turning frequently, until well browned on all sides. Serve with warm pitta bread and Sharp Yoghurt Dressing.
