Fried Pork with Sweet and Sour Sauce Recipe

Ingredients : Serves 4

450 g/1 lb minced (ground) pork

50 g/2 oz/1 cup fresh breadcrumbs

1 onion, finely chopped
2.5 ml/0.5 tsp sage
1 egg, beaten
Salt and freshly ground black pepper

45 ml/3 tbsp oil
400 g/14 oz/1 large can of apricots in, syrup
15 ml/2 tbsp comflour (cornstarch)

45 ml/3 tbsp soy sauce
45 ml/3 tbsp tomato puree (paste)

150 ml/0.25 pt Chicken Stock
2 red (bell) peppers, chopped
15 g/0.5 oz fresh root ginger, grated

Crisp salad, to serve

Method :

Mix together the pork, breadcrumbs, onion, sage and egg and season to taste. Shape into small balls. Heat the oil and fry (saute) the balls until golden brown all over and cooked through. Drain well and keep them warm. Meanwhile, drain the apricot syrup into a saucepan and mix in the cornflour, soy sauce, tomato puree and stock. Bring to the boil, stirring, then add the peppers and ginger and simmer for 5 minutes. Add the pork balls, stirring gently, and simmer for a further 5 minutes. Slice the apricots and add them to the sauce, heat through gently and serve with a crisp salad.
