Caribbean Pork Recipe

Ingredients : Serves 4

30 ml/2 tbsp oil
30 ml/2 tbsp soft brown sugar

700 g/1.5 lb pork fillet, cubed

5 ml/1 tsp allspice
5 ml/1 tsp thyme
1 onion, chopped
2 garlic cloves, chopped
15 ml/1 tbsp white wine vinegar

50 g/2 oz creamed coconut

300 ml/0.5 pt/1.25 cups water

100 g/4 oz mushrooms, sliced

1 green (bell) pepper, sliced

Juice of 0.5 lime

Method :

Heat the oil in a large frying pan (skillet), add the sugar and heat until caramelized. Add the pork and fry (saute) until browned. Add the allspice and thyme, cover and simmer for 10 minutes. Stir in the onion, garlic, wine vinegar, coconut and water, cover and simmer for 20 minutes. Add the mushrooms and green pepper, cover and simmer for 10 minutes. Stir in the lime juice before serving.
