Bacon and Kidney Rolls Recipe

Ingredients : Serves 4

12 streaky bacon rashers (slices), rinded

0.5 onion, finely chopped
15 g/1 oz/0.5 cup fresh breadcrumbs

100 g/4 oz lambs' kidneys, cored and chopped
2.5 ml/0.5 tsp dried mixed herbs
A few drops of Tabasco sauce
5 ml/1 tsp tomato puree (paste)
Boiled rice and a green salad, to serve

Method :

Stretch the bacon rashers with the blunt side of a knife. Mix together all the remaining ingredients. Place a spoonful of the mixture on the end of each piece of bacon and roll up. Grill (broil) under a hot grill (broiler) for about 10 minutes, turning once, until crisp and brown. Serve hot with rice and a green salad.
