Cut each slice of bread
into 8 small triangles.

Fry until both sides are
light brown.

Place the minced pork in a
mixing bowl.

Devein and mash the
shrimps.

Peel and mince the onions.

Mash the potatoes. Put all
the ingredients into a mixing bowl.

Stir in the seasoning and
one of the eggs. Pound until firm.

Beat the other egg in a
bowl. Dust a little cornflour on each fried slice.

Pile the shrimp mixture on
the fried slice and arrange a shrimp on top.

Brush with the beaten egg
and coat with the bread crumbs.

Bring half a wok of oil to
the boil.

Deep-fry the shrimp toasts
until golden brown.

Drain on to absorbent
paper.

Serve hot.
