Braised Pearl Beans Recipe

Ingredients :

Pearl beans (fortune beans)

Celery

Golden needle mushrooms

Dried Chinese mushrooms

Vegetable stock

Salt

Cooking wine

Cornstarch

Sesame oil

Method :
  • Scald pearl beans in hot water.

  • Scoop and cool under cold running water. Drip dry.

  • Remove old veins from celery, rinse and cut into thin strips.

  • Soften the Chinese mushrooms in water, remove stems and shred.

  • Remove ends of golden needle mushrooms, wash and drip dry.

  • Heat 1 1/2 tablespoons oil in a wok.

  • Stir-fry the Chinese mushrooms until fragrant.

  • Add pearl beans, golden needle mushrooms, wine and stock.

  • Braise over low heat for 10 minutes until beans are cooked.

  • Add celery and stir-fry.

  • Lastly, season with salt and thicken with cornstarch mixed with 1 1/2 tablespoon water.

  • Sprinkle with sesame oil for serving.

Note : If pearl beans are unavailable, you may replace it with lentils or lima beans.
