Method :
        - 
        
Scald pearl
        beans in hot water.  
        - 
        
Scoop and cool
        under cold running water. Drip dry.  
        - 
        
Remove old
        veins from celery, rinse and cut into thin strips.  
        - 
        
Soften the
        Chinese mushrooms in water, remove stems and shred.  
        - 
        
Remove ends of
        golden needle mushrooms, wash and drip dry.  
        - 
        
Heat 1 1/2
        tablespoons oil in a wok.  
        - 
        
Stir-fry the
        Chinese mushrooms until fragrant.  
        - 
        
Add pearl
        beans, golden needle mushrooms, wine and stock.  
        - 
        
Braise over low
        heat for 10 minutes until beans are cooked.  
        - 
        
Add celery and
        stir-fry.  
        - 
        
Lastly, season
        with salt and thicken with cornstarch mixed with 1 1/2 tablespoon water.  
        - 
        
Sprinkle with
        sesame oil for serving.  
       
        Note : If pearl
        beans are unavailable, you may replace it with lentils or lima beans.
