Pink Japanese Ginger Pickles Recipe

Ingredients : |

100g
150ml
200ml
6 tablespoons
1 teaspoon

Young ginger
Vinegar
Water
Castor sugar
Salt
A few drops of cochineal food coloring
(red food coloring)

Method :

Skin the ginger and slice
through a fine grater until thin slices are obtained.

Combine vinegar, water,
sugar, salt and coloring in a saucepan.

Bring to a boil.

Add the ginger and
continue to cook at a low simmering boil until the water is being
reduced to about half the amount and the coloring is absorbed by
the ginger.

Take the saucepan away and
leave aside to cool completely before serving.
