Pink Japanese Ginger Pickles Recipe

Ingredients :

100g young ginger, skin and slice using a fine grater until thin slices

150ml vinegar

200ml water

6 tablespoons castor sugar

1 teaspoon salt

A few drops of red food coloring

 

Method :
  • Mix vinegar, water, sugar, salt and coloring in a saucepan.

  • Bring to a boil.

  • Add the ginger and continue to cook at a low simmering boil until the water is being reduced to about half the amount and the coloring is absorbed by the ginger.

  • Take the saucepan away and leave aside to cool completely before serving.
