Pink Japanese Ginger Pickles Recipe

Ingredients :

100g

150ml

200ml

6 tablespoons

1 teaspoon

Young  ginger

Vinegar

Water

Castor sugar

Salt

A few drops of cochineal food coloring (red food coloring)

Method :
  • Skin the ginger and slice through a fine grater until thin slices are obtained.

  • Combine vinegar, water, sugar, salt and coloring in a saucepan.

  • Bring to a boil.

  • Add the ginger and continue to cook at a low simmering boil until the water is being reduced to about half the amount and the coloring is absorbed by the ginger.

  • Take the saucepan away and leave aside to cool completely before serving.
