Pork Skin Salad Recipe

Ingredients :

1/2 cup finely sliced boiled pork skin
1/2 cup finely chopped boiled lean pork
1 cup fresh mint leaves
1/2 teaspoon grated lemon rind
3 tablespoons dried prawn powder
1 tablespoon chopped fresh coriander leaves
1 tablespoon chopped spring onions
2-3 tablespoons coconut cream

1 tablespoon nam prik
1 tablespoon lime juice

1 tablespoon fish sauce

1-2 teaspoons sugar

Method :

The pork for this yam should be boiled, and if cooked as for sweet pork will have lots of flavor. Slice fat away from skin and use only the jellylike skin.


Mix all ingredients just before serving and serve sprinkled with chopped coriander leaves and spring onions.
