Sweet Pork Recipe

Pork cooked in this way is mainly used as an ingredient in other dishes, but is also delicious eaten with a hot chili sauce as an accompaniment to rice.

Ingredients :

500 g (1 lb) or more, loin of pork

1/2 cup palm sugar or substitute

1/2 cup fish sauce

Method :

Remove rind and cut pork into thin slices. Put pork and rind into a saucepan with about 3 cups water, the sugar and fish sauce. Bring to the boil, skim top, reduce heat and cook for 30-40 minutes. Uncover and cook until pork is tender and fat transparent. The skin too should be very soft. Allow to cool in the sauce.
