Method :
Remove rind and cut pork into thin slices.
Put pork and rind into a saucepan with about 3 cups water, the sugar and
fish sauce. Bring to the boil, skim top, reduce heat and cook for 30-40
minutes. Uncover and cook until pork is tender and fat transparent. The
skin too should be very soft. Allow to cool in the sauce.
