500 g loin of pork
1/2 cup palm sugar
1/2 cup fish sauce
Remove the rind and cut pork into thin slices.
Fill a saucepan with 3 cups of water, add in the pork and rind, the sugar and
fish sauce. Then bring to the boil, skim top, reduce heat and cook for 30-40
minutes. Uncover and cook until pork is tender and fat transparent. The
skin too should be very soft. Allow to cool in the sauce.
