Yellow Rice Recipe

(Kaha Bath)

A special occasion dish in which the rice is cooked in coconut milk and delicately flavored with spices.

Ingredients : Serves 6-8

Long grain rice

Ghee

Medium onions, finely sliced

Cloves

Black peppercorns

Cardamom pods, bruised

Ground turmeric

Salt

Curry leaves

Dried lemon grass, optional

Pandan leaves

Coconut milk

Method :
  • Wash rice and drain thoroughly,

  • Heat ghee in a large saucepan, add onion and fry until it begins to turn golden brown.

  • Add cloves, peppercorns, cardamom pods, turmeric, salt, curry leaves, lemon grass and pandan leaves.

  • Add rice and fry, stirring constantly, for 2-3 minutes, until rice is well coated with ghee and turmeric.

  • Add coconut milk and bring to the boil.

  • Reduce heat, cover and cook for 20-25 minutes without lifting the lid.

  • When rice is cooked, the spices will have come to the top.

  • Remove spices and leaves used for flavoring and fluff up the rice lightly with a fork.

  • Serve hot, accompanied by curries and accompaniments.
