Shrimp Sambol Recipe

(Koonee Sambola)

Ingredients :

The dried shrimps (koonee) used in this delicious sambol are really minute - no thicker than a piece of twine. They are sold in Japanese shops, neatly packaged in cellophane.

Small onion, finely chopped

Fresh red chilies, finely chopped

Fenugreek seeds

Lemon juice

Salt

Ground turmeric

Dried shrimps

Water

Freshly grated or desiccated coconut

Method :
  • Put all ingredients except coconut into a saucepan and cook, covered, until onions are soft.

  • Add coconut and toss, uncovered, until coconut absorbs all the liquid.

  • Taste for seasoning and add extra salt and lemon if necessary.

  • Serve with rice and curries.
