Red Shrimp Curry Recipe

(Rathu Isso Curry)

Ingredients : Serves 6

Small raw shrimps

Medium onion, finely chopped

Garlic, finely chopped

Finely grated fresh ginger

Small stick cinnamon

Fenugreek seeds

Strips lemon rind

Strip pandan leaf

Ground turmeric

Chili powder

Paprika

Salt

Coconut milk

Few curry leaves

Good squeeze lemon juice

Method :
  • Wash shrimps and remove the heads but leave the shells on. (in Sri Lanka, shrimps are often cooked in their shells, for better flavor)

  • Put all ingredients except lemon juice, into a saucepan and bring slowly to simmering point.

  • Simmer uncovered for 20 minutes or until onions are soft.

  • Add lemon juice and stir.

  • Taste and add more salt or lemon if required.
