Okra Bean Curry Recipe

Ingredients : Serves 4

Tender okra beans

Ground turmeric

Small onion, finely chopped

Fresh green chilies, seeded and sliced

Curry leaves

Roasted ground coriander

Roasted ground cumin

Pounded dried shrimps

Salt

Chili powder, optional

Coconut milk

Oil for frying

Small piece cinnamon stick

Method :
  • Wash okra, cut off tops, then slice diagonally into bite-size lengths.

  • Rub with ground turmeric.

  • Heat oil in a small frying pan and deep fry the beans until lightly browned. Drain.

  • Put all the other ingredients into a saucepan and simmer, uncovered until onions are cooked, about 10 minutes.

  • Add the fried okra, simmer until tender and remove from heat.

  • Serve with rice.
