Cucumber Sambol Recipe

(Pipinja Sambola)

Ingredients :

Large or 2 small green cucumbers

Salt

Thick coconut milk

Fresh red chili, seeded and sliced

Fresh green chili, seeded and sliced

Small onion, cut in paper-thin slices

Lemon juice

Method :
  • Peel cucumber and slice very thinly.

  • Put in a bowl, sprinkle with salt and let stand for at least 30 minutes.

  • Press out all liquid and if too salty, rinse with cold water.

  • Drain well.

  • Mix with remaining ingredients and serve as an accompaniment to a curry meal.
