(Pipinja Sambola)
Ingredients :

Large or 2 small green cucumbers
Salt
Thick coconut milk
Fresh red chili, seeded and sliced
Fresh green chili, seeded and sliced
Small onion, cut in paper-thin slices
Lemon juice
Peel cucumber and slice very thinly.
Put in a bowl, sprinkle with salt and let stand for at least 30 minutes.
Press out all liquid and if too salty, rinse with cold water.
Drain well.
Mix with remaining ingredients and serve as an accompaniment to a curry meal.
