Scald the milk and stir in the sugar, salt
and butter. Allow the mixture to lukewarm. Use a large warm bowl and add
in the 1.5 cups of warm water. Sprinkle the compressed yeast over the
water and stir until the yeast is dissolved. Add the lukewarm milk
mixture and 3 cups of the sifted plain flour with the gluten flour. Beat
with a wooden spoon until smooth. Make a soft dough by adding enough
additional plain flour.
Turn the soft dough onto a floured board,
and knead until the dough is smooth and elastic. Shape the dough into a
smooth ball. Put the dough in a greased bowl. Cover with a cloth and
allot to prove in a warm place until it doubled in quantity and the
dough is ready to be used in other recipes.
