Grilled Fish with Chilies Recipe

This is a very simple recipe and if you
like hot chilies as an accompaniment to fish, you will enjoy this dish.
Ingredients : Serves 4-6 |

1.5 kg

Tuna of Spanish mackerel in one piece
Sambal ulek
or fresh red chilies, ground
Salt
Lemon juice, optional

Method :
- Buy the portion of fish just above the
tail if possible, so that you avoid the stomach cavity.
- Put it a good distance above glowing
coals or under a preheated griller and cook fairly slowly until skin is
very brown and fish is cooked through to the center bone.
- Serve accompanied by sambal ulek or
fresh chilies pounded to a pulp in a mortar and pestle.
- If you do not want too much fire in
the sauce, remove the seeds.
- Add a little salt and lemon juice to
the chilies and take tiny dabs with the fish.
- To serve the fish, cut into wedges
lengthways, following the natural divisions made by the center bone.
