Ingredients :

Pastry

Marinade

1 teaspoon

 

Flour

Cold water

Boiling water

 

 

Lean pork

Cooked Chinese mushrooms

Parsley sprigs

Fat pork

Spring onions

A few vegetable leaves for lining

the steamer

 

Salt

Light soy

Pepper

Sugar

Wine

Cornflour and water mixture

Method :

 

Pastry -

  • Sift the flour into a mixing bowl and stir in the boiling water. Mix thoroughly with a wooden spoon.

  • Dust the table with a little flour.

  • Turn out the mixture, then wet your hands with cold water and knead into a soft dough.

Filling -

  • Wash and mince all the pork, then soak in the marinade for 20 minutes.

  • Dice the cooked Chinese mushrooms.

  • Wash and chop up the sprig onions and parsley.

  • Put all the ingredients into a deep bowl and pound until firm and springy.

  • Gradually add the cornflour mixture to bind well.

To complete  -

  • Knead the soft dough into a long roll and cut into 24 to 32 equal portions.

  • Press into individual thin rounds.

  • Divide the filing into proportion to the number of rounds.

  • Place a portion of filing on to each round, then pinch the edges together to form a bun.

  • Line the steamer with the vegetable leaves.

  • Arrange the buns on the leaves and steam for 10 minutes.

  • Remove and serve hot.
