Shrimp Toast Recipe

Ingredients :

White bread

peeled shrimps

Cooked potatoes

Whole shrimps for garnishing

Minced pork

Onions

Eggs

Bread crumbs

Chinese cooking wine

Pepper

Sugar

Light soy sauce

Method :
  • Cut each slice of bread into 8 small triangles.

  • Fry until both sides are light brown.

  • Place the minced pork in a mixing bowl.

  • Devein and mash the shrimps.

  • Peel and mince the onions.

  • Mash the potatoes. Put all the ingredients into a mixing bowl.

  • Stir in the seasoning and one of the eggs. Pound until firm.

  • Beat the other egg in a bowl. Dust a little cornflour on each fried slice.

  • Pile the shrimp mixture on the fried slice and arrange a shrimp on top.

  • Brush with the beaten egg and coat with the bread crumbs.

  • Bring half a wok of oil to the boil.

  • Deep-fry the shrimp toasts until golden brown.

  • Drain on to absorbent paper.

  • Serve hot.
