Ingredients :

Dried shrimps

Mashed shallots

Chinese mushrooms (cooked)

Water chestnuts

Chopped chives





Oyster sauce

Cornflour and water mixture


Five-spice powder

Sesame oil

Method :


Pastry -

  • Clean and boil the potatoes until soft.

  • Peel and mash into a pulp.

  • Bring the water to the boil in a small saucepan and dissolve the sugar.

  • Sift the glutinous rice flour on to a table and make a well in the center.

  • Pour in the syrup, gradually draw in the flour and mix well.

  • Then add the mashed potatoes and knead into a soft dough.

  • Cover with a towel and leave for later use.

Filling -

  • Dice the pork and marinate with 1 teaspoon light soy, 1/2 teaspoon sugar and 1/2 teaspoon wine for 10 minutes. Parboil and drain.

  • Dice the cooked Chinese mushrooms. Soak and dice the dried shrimps.

  • Peel and dice the water chestnuts.

  • Heat the 1 tablespoon oil in a wok and sauté the shallots.

  • Stir-fried the dried shrimps and all the other ingredients.

  • Sizzle in the wine and season to taste.

  • Thicken the sauce with the cornflour and water mixture.

  • Dish and leave to cool.

To complete  -

  • Roll the dough into a cylinder and divide into 32 equal portions.

  • Press each into a flat round.

  • Place 1 teaspoon of filing on each round, then draw in the edges to seal up and shape into a ball.

  • Coat with the sesame seeds and deep-fry until golden brown.

  • Remove and drain.
