Flaky Cakes with Ham and Turnip Recipe

Ingredients :

Outer Pastry

Inner Pastry

Warm water

Ham

Diced chives

Sugar

Pepper

Turnip

Salt

Five-spice powder

Method :

 

Pastry -

  • Sift the flour on to a table and make a well in the center.

  • Add the warm water and knead into a smooth dough.

  • Sift the flour on to the table and lightly press into a soft dough with the lard.

  • Roll up both pieces of dough into long strips and cut each into 12 equal portions.

  • Flatten a piece of outer pastry and wrap it in a piece of inner pastry.

  • Carefully flatten into a long thin strip, then roll up.

  • Repeat this process once more and press into a flat round.

Filling -

  • Mince the ham.

  • Peel, wash and shred the turnip, marinate with a little salt, then squeeze out the excess water.

  • Mix the minced ham, shredded turnip, diced chives and all the seasoning together.

To complete  -

  • Divide the filling into 12 equal portions.

  • Wrap a portion of filling with a piece of pastry, draw the edges together, and seal securely.

  • Flatten to about 0.5 cm thick with the sealed edge facing down.

  • Repeat the same process with all the pastry and filling.

  • Heat and grease a griddle.

  • Shallow-fry the cakes over low heat until golden on both sides.

  • Serve hot.
