Ingredients :

250g

1/2 teaspoon

Plain flour

Baking powder

Sugar

Egg

Glace cherries

Bicarbonate of soda

Desiccated coconut

Chilled lard

Beaten egg yolks for brushing

Method :
  • Preheat the oven to 150oC.

  • Sift the flour, bicarbonate of soda and baking powder on to the table.

  • Mix in the desiccated coconut evenly, then make a well in the center.

  • Put the sugar, lard and egg into the well and mix thoroughly.

  • Draw in the dry ingredients and work into a soft dough.

  • Roll out the dough and cut into 32 equal portions.

  • Shape each piece into a ball, then press with your thumb to make a hole in the center.

  • Put a quartered glace cherry and brush the top of the dough with the beaten egg yolks.

  • Arrange on a greased baking tray.

  • Bake in the preheated oven for 15 to 20 minutes until golden brown.
