Vegetable Burgers Recipe

Ingredients : Serves 4

4 wholemeal rolls, halved
60 ml/4 tbsp tartar sauce
4 lettuce leaves
4 radicchio leaves 1 tomato, sliced
100 g/4 oz tofu, sliced
25 g/1 oz/0.25 cup plain (all-purpose) flour

1 egg, beaten
50 g/2 oz/1 cup fresh breadcrumbs
30 ml/2 tbsp oil 1 onion, sliced

0.5 box of cress
60 ml/4 tbsp creme fraiche
30 ml/2 tbsp French mustard
15 ml/1 tbsp soy sauce
Salt and freshly ground black pepper

Method :

Toast the rolls and spread the bottom halves with the tartar sauce. Place a lettuce leaf, radicchio leaf and tomato slice in each. Coat the tofu slices in flour, then dip in the egg, then the breadcrumbs. Heat the oil and fry (saute) the slices until golden brown. Drain well and place on top of the tomato. Garnish with the onion and cress. Mix together the creme fraiche, mustard and soy sauce and season to taste. Spread over the burgers and top with the second half of the roll.
