700 g/1.5 lb pumpkin, diced
600 ml/1 pt/2.5 cups water
600 ml/1 pt/2.5 cups milk
25 g/1 oz/2 tbsp butter or margarine
Salt and freshly ground black pepper
15 g/1 tbsp caster (superfine) sugar
15 ml/1 tbsp chopped parsley

Method :
Place the pumpkin and water in a saucepan, bring to the boil, cover and
simmer for about 20 minutes until tender. Strain off the water, puree the
pumpkin in a food processor or blender, then return it to the pan with the
milk and butter or margarine and season to taste. Reheat, stirring
occasionally. Stir in the sugar and sprinkle with the parsley before
serving. |
