Giblet Stock Recipe

Ingredients : Makes 1 liter or 4 1/4 cups

Giblets of 1 chicken, turkey or goose

1 onion, sliced
1 carrot, sliced
1 bunch of mixed herbs
1 liter/4.25 cups water

Method :

Place all the ingredients in a large saucepan with just enough water to cover. Bring to the boil, skim, then cover and simmer gently for 2-3 hours. Strain and skim off any fat before using.
