Peperonata Recipe

Ingredients : Serves 4

15 ml/1 tbsp olive oil 1 onion, sliced
1 red (bell) pepper, sliced

1 green pepper, sliced

1 yellow pepper, sliced

1 garlic clove, crushed
200 g/7 oz/1 small can of tomatoes, chopped
Salt and freshly ground black pepper

Ciabatta bread, to serve

Method :

Heat the oil and fry (saute) the onion until softened but not browned. Add the peppers and garlic and fry gently for about 15 minutes until the peppers are tender. Stir in the tomatoes and season to taste with salt and pepper. Turn into a serving dish and leave to cool. Serve with crusty ciabatta bread.
