Grilled Goats' Cheese Salad Recipe

Ingredients : Serves 4

100 g/4 oz mixed salad leaves

8 baby plum tomatoes, halved
25 g/1 oz/0.25 cup walnuts, chopped

45 ml/3 tbsp olive oil
45 ml/3 tbsp hazelnut (filbert) oil

30 ml/2 tbsp balsamic vinegar
Salt and freshly ground black pepper

225 g/8 oz firm goats' cheese

8 thick slices of French bread

Method :

Mix together the salad leaves and tomatoes and arrange on individual plates. Sprinkle with the walnuts. Whisk together the oils and vinegar and season with salt and pepper. Drizzle over the salad and toss together gently. Cut the cheese into eight slices and place on top of the bread. Grill (broil) for about 4 minutes until bubbling and golden. Place on top of the salad and serve.
