Goat's Cheese with Lemon Recipe

Ingredients : Serves 4

100 g/4 oz goats' cheese
5 ml/1 tsp grated lemon rind
Salt and freshly ground black pepper

30 ml/2 tbsp olive oil
1 garlic clove, crushed
A few basil leaves, torn into pieces

Crusty bread or Crudites, to serve

Method :

Place the cheese in a shallow bowl and sprinkle with the lemon rind, salt and pepper. Mix together the oil and garlic and pour over the cheese. Sprinkle with the basil leaves. Leave to stand at room temperature for at least 1 hour before serving with crusty bread or crudites.
