Gingered Melon and Parma Ham Recipe

Ingredients : Serves 4

1 honeydew melon
100 g/4 oz Parma ham, thinly sliced and cut into strips
25 g/1 oz stem ginger. chopped
30 ml/2 tbsp ginger syrup
5 ml/1 tsp lemon juice
45 ml/3 tbsp olive oil
Freshly ground black pepper

Method :

Quarter the melon lengthways, remove the seeds and skin and cut the flesh into long slices. Wind the ham round the melon slices. Arrange on a serving plate. Whisk together the remaining ingredients until thoroughly mixed, then pour over the melon. Cover and chill for 1 hour before serving.
