Cheese Courgettes with Parma Ham Recipe

Ingredients : Serves 4

2 large courgettes (zucchini), halved lengthways
50 g/2 oz/0.5 cup Cheddar cheese, grated

1 hard-boiled (hard-cooked) egg, chopped
50 g/2 oz/0.5 cup Parma ham, chopped

5 ml/1 tsp chopped parsley
Salt and freshly ground black pepper

15 ml/1 tbsp freshly grated Parmesan cheese

Method :

Using a teaspoon, scoop out the centers of the courgettes to create boat shapes and arrange the shells, skin-side down, in a shallow ovenproof dish. Chop the flesh roughly, then mix with half the Cheddar, the egg, ham and parsley and season to taste with salt and pepper. Spoon into the courgette shells and sprinkle with the remaining Cheddar and the Parmesan. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 30 minutes until golden brown.
