50 g/2 oz wholemeal plain (all-purpose) flour
25 g/1 oz plain flour
75 g/3 oz unsalted (sweet) butter, softened
Freshly ground black pepper
75 g/3 oz Stilton or other blue cheese, crumbled
30 ml/2 tbsp beaten egg
45 ml/3 tbsp plain yoghurt
30 ml/2 tbsp celery or sesame seeds

Method :
Mix together the flours, then rub in the butter until the mixture
resembles breadcrumbs. Season with pepper. Mix in the cheese, then blend
to a soft dough with the egg. Wrap the dough in clingfilm (plastic wrap)
and chill for 1 hour. Roll out the dough to 3 mm or 1/8 in thick, cut into
5 cm/2 in rounds with a biscuit (cookie) cutter and place on un-greased
baking (cookie) sheets. Brush with the yoghurt and sprinkle with the
celery or sesame seeds. Bake in a preheated oven at 180°C/350°F/gas mark 4
for 12 minutes until crisp and brown. Cool on a wire rack, then store in
an airtight container until required. |
