Stir-Fry Shrimps and Cashew Recipe

Ingredients : Serves 4

15 ml/1 tbsp sunflower oil
1 garlic clove, crushed
5 ml/1 tsp crushed fresh root ginger
225 g/8 oz sugar snap peas or mangetout (snow peas)
225 g/8 oz cooked, peeled shrimps
75 g/3 oz unsalted cashew nuts

30 ml/2 tbsp soy sauce

30 ml/2 tbsp orange juice

5 ml/1 tsp lime juice
5 ml/1 tsp clear honey
Salt and freshly ground black pepper

Method :

Heat the oil in a wok or large frying pan (skillet), add the garlic and ginger and toss for a few seconds. Add the peas or mangetout and stir-fry for 2 minutes until coated in the flavored oil. Add the shrimps and nuts and stir-fry for 1 minute. Add the soy sauce, orange juice, lime juice and honey and stir-fry for 2 minutes until all the ingredients are well blended, hot and coated in the sauce. Season to taste and serve at once.
