Gardener's Chicken Recipe

Ingredients : Serves 4

100 g/4 oz/0.5 cup butter or margarine

50 g/2 oz streaky bacon, rinded and chopped
2 onions, sliced
3 celery sticks, sliced
100 g/4 oz mushrooms, sliced
1 chicken, jointed
450 g/1 lb small new potatoes
225 g/0.5 lb turnips, sliced
400 g/14 oz/1 large can of tomatoes

1 bouquet garni sachet
Salt and freshly ground black pepper

15 ml/1 tbsp chopped parsley

Method :

Melt half the butter or margarine and fry (saute) the bacon, onions, celery and mushrooms until soft but not brown. Transfer to a casserole dish (Dutch oven). Add the remaining butter or margarine to the pan and fry the chicken portions until lightly browned, then transfer to the casserole and add the potatoes, turnips, tomatoes and bouquet garni. Season to taste. Cover tightly and cook in a preheated oven at 150°C/300°F/gas mark 3 for 2 hours until tender. Discard the bouquet garni and serve sprinkled with the parsley.
