Chicken Escalopes with Cream Recipe

Ingredients : Serves 4

100 g/4 oz/2 cups fresh breadcrumbs

30 ml/2 tbsp chopped parsley
4 chicken breasts
1 egg, beaten
15 ml/1 tbsp milk
Salt and freshly ground black pepper

45 ml/3 tbsp oil
50 g/2 oz/0.25 cup butter or margarine

60 ml/4 tbsp dry white wine
10 ml/2 tsp lemon juice
60 ml/4 tbsp single (light) cream

Method :

Mix together the breadcrumbs and parsley. Flatten the chicken breasts with a rolling pin. Mix together the egg and milk and season to taste. Dip the chicken in the egg mixture, then press it into the breadcrumbs. Heat the oil and fry (saute) the chicken for 8 minutes each side until cooked through. Lift out on to a warm serving dish and keep warm. Melt the butter or margarine in the pan, add the wine and lemon juice and stir well. Add the cream, stir and heat through and pour over the chicken breasts. Serve immediately.
