Ingredients :
500 g Pork fillet, cut into 2 cm cubes
3 tablespoons Fish sauce
1 tablespoon Dry sherry
4 cloves Finely chopped garlic
1/2 teaspoon Pepper
5 cm Fresh ginger, grated
2 teaspoons Cooking oil
Salt to taste
Fresh mint to garnish
Method :
Soak 8 wooden skewers in water to prevent
them from burining as the rest of the ingredients are being prepared.
Use a bowl to marinate the pork, ginger, fish sauce, garlic, sherry,
salt and pepper for 30 minutes. Drain the pork but reserve the marinade. Dry the
skewers and thread t he meat onto them. Brush a
heavy-based pan with the oil and heat it until extremely hot. Cook the
skewers of pork for about 4 minutes. Ensure to turn the skewers
regularly until the pork becomes dark golden brown and sprinkle
over a little of the marinade. Do not
overcook the pork or it will become very dry. Garnish
with the mint and serve with steamed rice.
