Cut the pork
into cubes, the size of your finger tip.

Add the lemon
rind, onions, soy sauce and 1 tablespoon cooking oil into a container of
the electric blender.

Blend
ingredients until the paste is smooth.

Then add the
remaining ingredients and blend for a few seconds longer.

If necessary,
add the remaining tablespoon of oil to draw ingredients down over the
blades.

Pour the
blended mixture over the meat, mix well and marinate for at least 1
hour.

Using a
bamboo skewers, thread about 6 pieces of the meat to a skewer until the
halfway up the skewer.

Grill under a
preheated griller or over a glowing coals until meat is just cooked.

Serve with
satay peanut sauce.
